Aflatoxins are toxic compounds produced by certain species of fungi, particularly Aspergillus flavus and Aspergillus parasiticus, which can contaminate crops such as maize, groundnuts, and sorghum. These mycotoxins are potent carcinogens and can cause a range of health problems, including liver damage, immune suppression, and in severe cases, death (Mustapha & Kabiru, 2023). In Kebbi State, which is a major agricultural hub in Nigeria, grains are widely cultivated and stored for both local consumption and trade. However, improper storage conditions, such as high humidity and inadequate ventilation, promote the growth of aflatoxin-producing fungi, leading to contamination. Despite the importance of preventing aflatoxin contamination, there is limited research on its prevalence in stored grains in Kebbi State and its health impact on consumers. This study seeks to examine the prevalence of aflatoxin contamination in stored grains and its potential health effects in Kebbi State.
Aflatoxin contamination in stored grains poses a significant threat to public health in Kebbi State, where grains are a staple food and are often stored for long periods. Poor storage conditions and inadequate monitoring have resulted in the widespread contamination of grains with aflatoxins, increasing the risk of foodborne illnesses and long-term health issues among consumers. There is a lack of comprehensive data on the extent of aflatoxin contamination in stored grains in Kebbi State, as well as the impact on public health, necessitating an investigation into the issue.
This study will focus on the prevalence of aflatoxin contamination in grains stored in rural and urban areas of Kebbi State. The scope will include an assessment of contamination levels and associated health risks. Limitations may include challenges in accessing storage facilities and obtaining representative samples of grains from different regions of the state.
